This is very unique recipe. Lot of people do not know. This goes well with mango ras (mango pulp+milk+sugar).
Ingredients:
- 2 cup wheat flour
- ½ tsp salt
- water (for kneading)
- 2 tbsp oil
For stuffing:
- 1 cup Jawar (Sorghum) flour
- ½ tsp salt
Method:
To make stuffing:
- Boil 1 cup water, add ½ tsp salt
- To boiling water, add sorghum flour
- Mix and cover with the lid
- Mix 1-2 times intermittently
- Turn off the stove
- Cover it for 15 minutes until it cools down
To make dough:
- Take wheat flour in a large bowl, add 1 tbs oil and ½ tsp salt. Mix well.
- Add water slowly and start kneading. Knead to a smooth and soft dough.
- Grease oil and rest for 20 minutes.
How to make poli:
- Knead the jawar mixture by adding some water if needed
- Make tennis sized balls
- Make balls from the kneaded dough too
- Take a dough ball, spread it with the hands, and place the stuffing ball in the center of it.
- Take the edges and start pleating bringing it to the center.
- Join the pleats together and secure them with tight pinching. Make sure the stuffing should not be visible.
- Sprinkle some wheat flour and roll slightly thick.
- Transfer the rolled roti to a heated flat pan and apply some oil on the top surface.
- Flip it and apply oil on another side too.
- Cook it well. Serve roti with mango ras.
