Peanut-Jaggery Laddoo


This is a very simple but delicious recipe. It is very easy to make and needs only two ingredients. By consuming this combination, you can get antioxidants, magnesium, iron, essential fats, and calcium. I make it in bulk and it stays good for 4-6 weeks.

Ingredients:

  • 2 cups raw peanuts
  • 1 ½ cup jaggery

Method:

  • Take a thick-bottomed pan. Add raw peanuts to it. I sprinkle 1 tsp water over peanuts which helps to roast them properly.
  • Start roasting them with stirring at intervals.
  • Roast until the peanuts become crunchy. You can notice that they develop brown-black spots on them. It might take 12-15 minutes time.
  • You can use an oven or microwave for roasting.
  • Cool them down.
  • I used to remove the skin of peanuts by rubbing them between my palms. But now, I grind them without peeling the skin.
  • Now add peanuts and jaggery to the grinder/mixer and grind to get a coarse consistency.
  • Take a small portion of the mixture into your palm and press it with another hand to give it a round shape.
  • Store the laddoos in an airtight jar and enjoy!
