
Paneer Methi Pulao is a quick, easy and tasty pulao variant made with white paneer, methi, basmati rice, spices, and herbs.
Ingredients:
- 2-3 bay leaves
- 3 cloves
- 4-5 cardamoms
- 2 black cardamoms
- ½ tsp cumin seeds or shahjeera

- 1-2-star anise
- 2 cups paneer cubes
- -10-12 cashews
- -2 cups basmati rice (soaked for 30 min)
- -1 medium onion (thinly sliced)
- 1 cup chopped fresh methi (fenugreek)
- – cilantro/coriander leaves
- – 2-3 green chili
- 1 tsp oil
- 2 tbs butter or ghee
- ½ tsp turmeric powder
- ½ tsp garam masala or biryani masala
- Salt
- Lemon juice
- ¼ cup chopped cilantro
Method:
- Soak basmati rice for 30 minutes.
- Take a pan, add oil

- Add paneer cubes and fry them until they turn slightly brown
- Transfer them to a plate
- In the same pan, add oil and butter/ghee
- Add whole spices (bay leaves, cloves, cardamom, star anise, black cardamoms, cumin seeds or shahjeera) and saute for 1-2 minutes
- Add cashews and roast them well
- Add sliced onions
- Fry them until onions turn golden
- Add green chili


- Then add chopped methi and mix well
- Add turmeric powder, salt and garam masala and mix well
- After 1 minutes, add sauted paneer cubes
- Finally, add soaked and drained rice
- Mix well and add 1:2 cups water (here, 4 cups of water for 2 cups of rice)
- Adjust salt, add 1 tsp lemon juice and chopped cilantro

- You can cook the mixture either on the stove, or pressure cooker or an iPot
- I cooked it in the iPot on “rice” setting
- Enjoy the yummy pulao with cucumber raita.
