Paneer is an Indian cottage cheese and bhurji means scrambled. This is a very popular Indian dish. Cheese is easily available in any Indian grocery store. But it is very easy to make at home too. Here, I am giving recipe of paneer bhurji with homemade paneer.

Egg bhurji (Anda bhurji) can be made exactly the same way by replacing paneer with boiled eggs.

Ingredients:

  • 3 cups whole milk
  • 2 tbsp lemon juice (vinegar can be used instead)
  • 4 green chilies-slit and cut into pieces
  • 1 cup sliced onions
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • Salt

Method:

  • Boil milk in a sauce pan
  • Then add lemon juice and ½ tsp salt to milk
  • Do not stir too much
  • Milk will start getting curdling
  • Once all milk gets curdled leaving water separately, turn off the stove
  • Place a muslin cloth over the colander and pour curdled milk to the cloth
  • Bring all the edges of muslin cloth together and squeeze the paneer to drain off excess whey
  • Then rinse cheese under cold water and again squeeze to drain off excess water
  • Make a knot and put it in a container
  • Put something heavy on it
  • After 20 minutes, take out paneer

  • Take oil in a pan and heat it
  • Add mustard seeds and cumin seeds and let them pop
  • Add green chili pieces and saute them
  • Then add onions, mix and fry them until they turn pink or golden
  • Add salt and turmeric powder, mix well
  • Lastly, add scrambled paneer to it
  • Mix well, adjust salt and cover it

  • Once paneer starts changing color to light brown in some areas (as shown in the pic), turn off the stove
  • Garnish it with cilantro if interested
  • Enjoy! It makes a great side with roti or naan. You can make sandwich or paratha by using paneer bhurji.
