Naral means Coconut, while bhat/bhath refers to cooked rice. Narali bhath is a traditional sweet coconut rice fragranced with cardamom, saffron, cinnamon and cooked in coconut milk, for an amazing aroma and taste. It is specially made during special festivals (rakhi pornima).
Ingredients:
- 2 tbsp ghee / clarified butter
- 10 cashews
- 2 tbsp raisins
- 1 cup jaggery
- 1 cup coconut (grated)
- 3-4 pods cardamom
- 3-4 cloves
- 1-inch cinnamon
- 1 cup basmati rice (soaked 20 minutes)
- 2 cups coconut milk + 1 cup water
- Few saffron threads
- ¼ tsp salt
- ½ tsp cardamom powder
Method:
- Wash basmati rice and soak it for 20 minutes
- After 20 minutes, drain the water and place/spread it in the colander
- Take a pot, add ghee and warm it
- Saute cinnamon, cloves, cardamom pods until it turns aromatic
- In the same mixture, fry cashews and raisins
- Then add basmati rice and salt
- Mix it and saute for 1 minute
- Add 2 cups coconut milk and 1 cup water to it
- Also add saffron threads to it
- Mix well, cover and simmer for 10 minutes or until rice is cooked 90%
- Add 1 cup grated coconut, 1 cup jaggery and cardamom powder
- Mix well, lower the flame and cover it
- Let is simmer for 4-5 minutes
- And yummy coconut rice is ready!
