Multigrain Zucchini Roti


This is the nutritious recipe which can be served for breakfast, lunch or dinner. This savory roti is made with grated zucchini mixed with multiple grain flours and spices. I tried it by adding grated cheese to few rotis (as shown in the picture below).

Ingredients:

  • ¾ cup wheat flour
  • ¾ cup ragi flour
  • ¾ cup jowar flour
  • ¾ cup chickpea (besan) flour
  • ¼ teaspoon ajwain (carom seeds)
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon red chili powder

  • 1 tablespoon kasoori methi
  • 1.5 cup grated zucchini
  • ¼ cup chopped cilantro
  • Corse paste of garlic and green chili
  • Oil
  • Salt as required

Method:

  • First take all the ingredients in a mixing bowl and mix well
  • By adding water, make a dough
  • The dough has to be moist and smooth
  • Keep it aside for 15 minutes

  • Take a tennis-sized dough
  • Take an aluminum foil
  • Grease it with oil
  • Place the ball of dough over the foil and slowly spread it with your palm to make it round and flat
  • Take a pan and heat it
  • Spread a bit of oil on the pan
  • Keep it on medium flame
  • Regulate the flame as required
  • Lift the foil and gently place it with the roti side touching the pan
  • Carefully peel the foil from the rolled roti dough
  • Sprinkle some oil over the surface and at the edges
  • Cook for 2 to 3 minutes or till the base turns golden and crisp
  • Turn over the roti and continue to cook the other side also  
  • You should see some charred spots on it
  • Serve it with Onion Chutney and/or dahi!
