Minestrone is a healthy, thick and easy Italian vegetable soup made with vegetables, pasta, beans and broth. It is known for its tomato-based broth. The word minestrone means a thick vegetable soup. It typically contains carrots, tomato chunks, kidney beans, celery, Zucchini, onions and pasta.
Ingredients:
- 1 cup diced carrots
- 1 cup diced zucchini
- 1 cup diced onion
- 1 cup diced celery stalks
- 2-3 garlic cloves (minced)
- 1 can diced tomatoes
- 32 oz vegetable broth
- 1 cup red kidney beans
- 1 cup chickpeas
- 15 oz canned great Northern beans
- 1 cup elbow pasta
- 2 tbsp olive oil
- Salt
- 1 tbsp Italian seasoning
- 1 tbsp dry basil
- 1 tsp black pepper powder
Method:
- If using dry beans (red kidney beans, chickpeas), soak them overnight
- Wash, add water and cook on stove top until they cook and keep them aside
- Take a pan, add 1 tsp olive oil and heat it
- Then add diced onions and fry until golden
- Keep it aside
- In a cooking pot, add rest of olive oil
- Once heat, add minced garlic and fry until rawness goes away
- Add diced celery and let them cook for 1-2 minutes
- Then add carrots and cook for another minutes
- Add zucchini and mix well
- Cover and cook it until all veggies cook well
- Then add 1 can of diced tomatoes
- Cook it for 2-3 minutes and then add broth
- Add cooked and drained beans
- Then add pasta and salt
- Let it simmer about 10 minutes
- Add spices (pepper powder, Italian seasoning mix, basil)
- Add drained great Northern beans
- Lastly, add fried onions
- Mix well and let it cook well
- You can add either water or more broth to get desired thickness of the soup
- Let it simmer for another 10 minutes
- Turn off the stove
- Serve hot with garlic bread!
