Makhana Curry


Makhanas, also called foxnuts or lotus seeds. It contains antioxidants and is rich in several micronutrients, including calcium, magnesium, iron, and phosphorus. Makhana is rich in protein and fiber, which may be beneficial for weight loss.

Ingredients:

  • 2 cups Makhana seeds
  • 1 big onion-sliced
  • 2-3 tomatoes
  • 3 bay leaves
  • 3-4 cardamoms
  • 1-inch cinnamon
  • Oil or butter or combo
  • 3-4 garlic cloves
  • 1-inch ginger
  • ¼ cup cashews
  • 1 tbs Kasoori methi (dried Fenugreek leaves)
  • Salt
  • 1-2 tsp red chili powder
  • 1 tsp cumin seeds

Method:

  • Heat either butter or oil in a pan, add lotus seeds and roast them until they turn golden-brown and crisp
  • Put them aside

  • Heat oil in a pot, add cumin seeds, cinnamon, ginger pieces, garlic pieces, onions and cashew
  • Mix them together and saute until onion turns translucent
  • Let it cool down
  • Once the mixture cools down, grind it to the coarse paste along with adding tomato pieces
  • In the same pot, add some oil, heat it, add bay leaves
  • Then add the onion-tomato paste and cook

  • Once oil starts separating, add red chili powder, dried Fenugreek leaves, salt and mix well
  • Once it gets thickened, add makhana seeds and water to get the desired consistency and continue cooking until it gets thickened
  • Turn off the stove, garnish it with chopped cilantro and serve with naan or roti
