Khawa/khoya/mawa poli/roti is an authentic Maharashtrian recipe. It is a sweet Indian flatbread made with flour, stuffed with a sweet filling made from khawa and usually served with a generous amount of ghee. You can use store bought khawa or make it at home. Ingredients:
- 200 grams khawa
- 1 tsp cardamom powder
- 3 tbsp roasted wheat flour
- 2 tbsp powdered sugar
- 250 grams whole wheat flour
- 1 tsp salt
- 1 tbsp oil
Method:
- Dry roast wheat flour on medium flame for 2-3 minutes until it changes color
- Mix khawa, powdered sugar, roasted wheat flour, and cardamom powder
- Mix well and make medium sized balls
- Keep them aside
- Take what flour, add salt and 2 tbsp oil
- Mix well and by adding water slowly, knead it to soft dough
- Grease it with oil and keep it aside for 30 minutes
- Pinch ball-sized dough and make a smooth ball
- Apply some oil to your palms and spread the dough ball by pressing with four fingers
- Then place a ball sized khawa ball, seal the dough without any gaps
- Dust the ball with wheat flour and flatten it slightly
- Roll it as thin as possible with a rolling pin
- Make sure the stuffing is distributed uniformly
- Heat the pan, apply some oil and transfer the rolled khawa poli and cook it
- Flip it once the base is half cooked
- Spread the oil or ghee on both sides and cook well
- Finally, enjoy khawa poli with ghee.
