Khawa (Khoya or Mawa)


Khawa or mawa or khoya or palkoa is a coagulated milk solid that is widely used in making Indian desserts. Traditionally khawa is prepared by simmering whole milk for hours over a medium flame. Milk is reduced to dough-like milk solid. I found this very easy recipe of making khawa from one can of condensed milk in just 6 minutes.

Ingredients:

  • 1 can sweetened condensed milk
  • 1 tbsp yogurt/dahi
  • 1 tsp ghee

Method:

  • Transfer condensed milk from a can to a deep and tall pot
  • Add yogurt, mix well and cook it in a microwave for 2 minutes
  • Yogurt gives khawa a nice granular texture
  • Stir well and again microwave it for 2 minutes

  • You can stir with a spoon intermittently to avoid spilling
  • It starts getting curdled
  • Mix well, add ghee and again microwave it for another 2 minutes
  • Khawa is ready
  • Let it cool down
  • You can add cardamom powder, saffron and dry fruit pieces if you want
  • Store it in the container, refrigerate it and use it to make any Indian sweet dishes.

If you like little thicker and drier khawa, microwave the mixture for additional 2 minutes (total of 8 minutes) and you will get the texture and color as shown in the picture:
