Kala chana (Chickpea) Salad


I used Indian brown chickpeas to make this salad. But you can use chickpeas (garbanzo beans) instead. Chickpea salad is loaded with fresh vegetables, nuts, seeds, herbs, lemon juice, black pepper powder and salt. You can add cheese, boiled potatoes, avocado, green bell pepper, sweet corn, cucumber etc.

Ingredients:

  • 1 cup brown chickpea (chana)
  • 2 tsp lemon juice
  • ½ tsp black pepper powder
  • Salt
  • ¼ cup cilantro
  • ½ cup cherry tomatoes-cut into pieces
  • ½ cup yellow bell pepper chopped
  • ½ cup orange bell pepper chopped
  • ½ cup onions-chopped
  • 1 tbs pumpkin seeds
  • Fistful hazel nuts
  • Fistful brazil nuts

You can add roasted sesame seeds, roasted flax seeds too

Method:

  • Wash, and soak brown chickpeas overnight
  • Pressure cook them and let them cool down
  • Combine cooked chickpeas, all vegetables, nuts, herbs in a salad bowl
  • Add salt, pepper powder and lemon juice
  • Mix well and enjoy!
