This is a very similar recipe to lemon rice. You can make the spiced mango mixture in bulk and refrigerate. It stays good for several days. All you have to do is mix it with cooked rice.
Ingredients:
- Cooked white rice- 1 cup
- Turmeric powder ¼ spoon
- Cooking oil 1-2 spoons
- Mustard seeds ½ spoon
- Cumin seeds ½ spoon
- Green chili 1-2 or as per your taste
- Raw peanuts fistful
- Sour green mango
- Chana daal+ urad daal 1 tsp
- Ginger paste/pieces (optional)
- Salt
- Curry leaves 5-6
- Cilantro (coriander leaves)
Method:
- Cut green chilies into small pieces.
- Chop cilantro.
- Wash, peel, and grate a green mango.
- Heat 2 tsp oil in a pan.
- Add mustard, cumin, chana daal, urad daal. Saute them until lightly golden.
- Add peanuts and roast them until crunchy.
- Add curry leaves, ginger paste, chili pieces and fry them.
- Add grated mango. Mango must be cooked completely and must turn soft.
- Add turmeric, salt, and hing (optional)
- Add cooked rice to the pan and mix.
- Lastly, garnish with cilantro.
