Khichdi is an Indian staple food that is a blend of cooked lentils and rice seasoned with mild spices. Dal Khichdi is a one-pot nutritious meal made with rice, moong dal, and mild spices. Conventionally equal parts of rice and lentils are used for khichdi. But you can make the ratio 2:1 (2 rice: 1 dal). Khichdi can be used with a combination of different dals, millets, and chopped vegetables like carrot, beans, potato, tomatoes, green peas, and onions.
Ingredients:
- ½ cup rice
- ½ cup Moong dal
- 1 tbs ghee
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- ¼ tsp Hing
- 3 green chilies
- 7-8 curry leaves
- ½ tsp turmeric powder
- Salt
- ¼ cup chopped cilantro
- 3-4 garlic cloves
- ½ tsp ginger paste
- 1-2 bay leaves (optional)
Method:
- Wash rice and moong dal, drain.
- If you want to make mushy khichdi, add 1:3.5 water. If not, add 1:2 water.
- Take a pan, add ghee, and heat it.
- Add mustard seeds, and cumin seeds and let them crackle.
- Add hing powder, garlic pieces, ginger paste, green chili pieces, and curry leaves and fry them.
- Add this tempering to the rice and moong dal mixture.
- Add salt. Mix well.
- Transfer this mixture to a pressure cooker or instant pot and cook for 3-4 whistles.
- Serve the dal khichdi with pickle, papad, and ghee, and enjoy!
