Dal Khichdi


Khichdi is an Indian staple food that is a blend of cooked lentils and rice seasoned with mild spices. Dal Khichdi is a one-pot nutritious meal made with rice, moong dal, and mild spices. Conventionally equal parts of rice and lentils are used for khichdi. But you can make the ratio 2:1 (2 rice: 1 dal). Khichdi can be used with a combination of different dals, millets, and chopped vegetables like carrot, beans, potato, tomatoes, green peas, and onions.

Ingredients:

  • ½ cup rice
  • ½ cup Moong dal
  • 1 tbs ghee
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • ¼ tsp Hing
  • 3 green chilies
  • 7-8 curry leaves
  • ½ tsp turmeric powder
  • Salt
  • ¼ cup chopped cilantro
  • 3-4 garlic cloves
  • ½ tsp ginger paste
  • 1-2 bay leaves (optional)

Method:

  • Wash rice and moong dal, drain.
  • If you want to make mushy khichdi, add 1:3.5 water. If not, add 1:2 water.
  • Take a pan, add ghee, and heat it.
  • Add mustard seeds, and cumin seeds and let them crackle.
  • Add hing powder, garlic pieces, ginger paste, green chili pieces, and curry leaves and fry them.
  • Add this tempering to the rice and moong dal mixture.
  • Add salt. Mix well.
  • Transfer this mixture to a pressure cooker or instant pot and cook for 3-4 whistles.
  • Serve the dal khichdi with pickle, papad, and ghee, and enjoy!
