This is a very simple and quick Indian dessert that requires very few ingredients. People use freshly grated coconut or frozen grated coconut or dry desiccated coconut or any combination. I used sweet condensed milk, but you can use milk+sugar+milk powder in place of condensed milk.
Ingredients:
- 350 gm frozen grated coconut
- 1 can (397 gm) sweetened condensed milk
- 50 gm Desiccated coconut (from Indian store)
- 1 tsp cardamom powder
- 8-10 Saffron threads (optional)
- 1 tbs ghee (optional)
- Dry fruit pieces of your choice-I used almonds. You can use pistachio or cashews or any combination
Method:
- Take a pot and heat it
- Add condensed milk and frozen coconut, mix well and cook with continuous stirring
- After 3-4 minutes, add desiccated coconut. It helps with binding.
- Then take a small bowl, add saffron threads and 2 tsp water to it. Mix it and transfer this saffron water to the pan.
- Add cardamom powder and mix well
- At this point, you can add 1 tsp ghee, but it is optional
- Cook and stir till the mixture starts separating from the sides of pan and releasing oil (from coconut).
- Take a plate or baking tray. Either grease it with some ghee or place a parchment paper (you do not need to grease the parchment paper)
- Transfer the burfi mixture to tray
- Evenly spread the mixture with a spatula
- Sprinkle the dry fruit pieces over it and let it cool
- Once it cools down, cut it into pieces
- Refrigerate the tray for 1-2 hours before eating
- Enjoy the mouthwatering coconut burfi!
