This is a very quick and delicious recipe. It can be prepared with leftover rice in 15 minutes.

Cilantro=Coriander=धनिया पत्ता=कोथिंबीर=కొత్తిమీర

Ingredients:

  • 1.5 cups cooked white rice
  • 1 cup Cilantro
  • 2 garlic cloves
  • 3 green chilies
  • 2-3 pieces of dried red chilies
  • 1 tsp cumin seeds
  • 2 tbsp grated fresh/frozen coconut
  • Few curry leaves
  • Lemon juice as per your taste
  • Oil

  • Salt
  • 1 tsp mustard seeds
  • Few cashews
  • Fistful of raw peanuts
  • 1 tsp Urad dal
  • 1 tsp Chana dal
  • 1-inch ginger

Method:

  • Grind cilantro, green chilies, coconut, garlic, ginger, and cumin seeds to a smooth paste by adding a small amount of water. Keep it aside
  • Take a pan, add oil to it, and heat it
  • Add raw peanuts and cashews to it and roast them for a minute
  • Then add urad dal, chana dal, dried red chili pieces, curry leaves, and mustard seeds

  • Let all ingredients fry well and change color to brownish, especially peanuts, cashews, urad dal, chana dal
  • Then add the green paste and salt
  • Mix well and cook this mixture on low flame until water evaporates and oil starts separating
  •  Lastly, add white rice, and mix well
  • Add lemon juice, adjust salt, and cook for 2-3 minutes covered
  • Turn off the stove and enjoy the delicious, green-colored cilantro rice!
