This is a very quick and delicious recipe. It can be prepared with leftover rice in 15 minutes.
Cilantro=Coriander=धनिया पत्ता=कोथिंबीर=కొత్తిమీర
Ingredients:
- 1.5 cups cooked white rice
- 1 cup Cilantro
- 2 garlic cloves
- 3 green chilies
- 2-3 pieces of dried red chilies
- 1 tsp cumin seeds
- 2 tbsp grated fresh/frozen coconut
- Few curry leaves
- Lemon juice as per your taste
- Oil
- Salt
- 1 tsp mustard seeds
- Few cashews
- Fistful of raw peanuts
- 1 tsp Urad dal
- 1 tsp Chana dal
- 1-inch ginger
Method:
- Grind cilantro, green chilies, coconut, garlic, ginger, and cumin seeds to a smooth paste by adding a small amount of water. Keep it aside
- Take a pan, add oil to it, and heat it
- Add raw peanuts and cashews to it and roast them for a minute
- Then add urad dal, chana dal, dried red chili pieces, curry leaves, and mustard seeds
- Let all ingredients fry well and change color to brownish, especially peanuts, cashews, urad dal, chana dal
- Then add the green paste and salt
- Mix well and cook this mixture on low flame until water evaporates and oil starts separating
- Lastly, add white rice, and mix well
- Add lemon juice, adjust salt, and cook for 2-3 minutes covered
- Turn off the stove and enjoy the delicious, green-colored cilantro rice!
