
It is a very popular Indian dessert made with fresh grated carrots, ghee, dry fruits and condensed milk (or milk and sugar).
Ingredients:
- 4 big carrots
 - ¼ cup milk
 - 2 tbsp ghee
 - 1 can condensed milk
 - Cardamom powder
 - Dry fruit pieces (raisins, cashews, almonds)
 

Method:
- Wash and peel carrots
 - Grate the carrots (either grate fine or thick)-I showed both types in the picture
 

- Add ghee to a pan
 - Fry cashew and almond pieces first and once they start changing color, add raisins
 - Transfer them to a plate
 - Add grated carrots to the pan
 - Mix well and cook for 2-3 minutes on low flame
 


- If mixture gets too dry, add milk and cook well
 - Keep stirring to prevent burning at the bottom
 - Then add condensed milk as per your taste (I used 80% of the can)
 - Mix and continue to cook
 - Once halwa starts thickening, add cardamom powder and fried dry fruits
 - Optional: add 2 drops of artificial red food color and mix well
 - Once halwa starts separating from the sides, turn off the stove
 - Serve either hot or cold carrot halwa!
