This is the recipe of homemade carrot cake. Is it very easy to make and perfectly moist. You can add the pieces of almonds and/or raisins to the batter.

Ingredients:

  • 1 cup all-purpose flour (you can use whole wheat flour)
  • 1 tbsp corn flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoons ground cinnamon
  • ½ cup vegetable oil

  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup grated peeled carrots

Method:

  • Wash, peel and grate the carrots and keep it aside
  • Preheat oven to 350 F
  • Grease the round cake pan, line the bottom with parchment paper and then grease the top of parchment paper
  • In a bowl, add eggs, whisk, add sugar, then whisk and add oil, vanilla extract and whisk it well
  • Add the mixture of all-purpose flour, corn flour, salt, baking soda, baking powder, cinnamon powder

  • Add the dry mixture to egg mixture and mix well by gentle stirring
  • Lastly, add grated carrots to the mixture and mix well
  • Transfer the cake batter to the prepared cake pan

  • Bake it at 350 F for 30 minutes
  • Turn off the oven and take out the cake pan
  • Separate the sides of cake with a knife
  • Place a plate on the top of cake pan upside down
  • Flip the cake pan along with the plate to transfer the cake to plate
  • Enjoy the yummy carrot cake!
