Brown Rice & Lentil Khichdi


This brown rice lentil khichdi is a quick, tasty, and healthy recipe.

Ingredients:

  • 1 cup brown rice
  • 1 cup whole masoor/lentils/brown moth beans
  • 2-3 green chilies
  • Curry leaves
  • 1 tbs Ghee
  • 2-3 bay leaves

  • 1 cup chopped spinach
  • 1 tomato- chopped
  • ½ cup chopped onions
  • 3-4 garlic cloves- finely chopped
  • 1 tsp grated ginger or paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • ¼ tsp hing
  • 1 tsp cumin seeds
  • Salt
  • Lemon juice

Method:

  • Wash the rice and lentils under running water
  • Add 6 cups of water and cook in a pressure cooker or instant pot on high pressure
  • Take a pot, add ghee, and heat it
  • Add cumin seeds and bay leaves and roast them
  • Add slit green chilies, curry leaves, ginger paste, garlic pieces, hing, and chopped onions

  • Once onions turn golden, add chopped spinach and tomato pieces
  • Cook until tomato pieces become soft
  • Add turmeric powder, red chili powder, and salt and mix well
  • Lastly, add the cooked mixture of brown rice and lentils, and mix well
  • You can add water if needed to get the desired consistency
  • Add lemon juice and adjust salt
  • Garnish with cilantro
  • Serve with ghee and papad.
