This brown rice lentil khichdi is a quick, tasty, and healthy recipe.
Ingredients:
- 1 cup brown rice
- 1 cup whole masoor/lentils/brown moth beans
- 2-3 green chilies
- Curry leaves
- 1 tbs Ghee
- 2-3 bay leaves
- 1 cup chopped spinach
- 1 tomato- chopped
- ½ cup chopped onions
- 3-4 garlic cloves- finely chopped
- 1 tsp grated ginger or paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- ¼ tsp hing
- 1 tsp cumin seeds
- Salt
- Lemon juice
Method:
- Wash the rice and lentils under running water
- Add 6 cups of water and cook in a pressure cooker or instant pot on high pressure
- Take a pot, add ghee, and heat it
- Add cumin seeds and bay leaves and roast them
- Add slit green chilies, curry leaves, ginger paste, garlic pieces, hing, and chopped onions
- Once onions turn golden, add chopped spinach and tomato pieces
- Cook until tomato pieces become soft
- Add turmeric powder, red chili powder, and salt and mix well
- Lastly, add the cooked mixture of brown rice and lentils, and mix well
- You can add water if needed to get the desired consistency
- Add lemon juice and adjust salt
- Garnish with cilantro
- Serve with ghee and papad.
