Bottle Gourd (Kaddu) Chutney


Bottle gourd=Kaddu=Dudhi=Lauki. This is a very delicious chutney made with steamed kaddu pieces, and oil roasted spices.

Ingredients:

  • 1 medium-size Kaddu
  • 1 cup peanuts
  • 4-5 green chilies
  • Lemon sized tamarind
  • Marble size jaggery
  • 1 tbs coriander seeds
  • 1 tbs cumin seeds
  • Salt
  • Oil
  • 1 cup cilantro
  • 4-5 garlic cloves

Method:

  • Wash, peel the Kaddu, and cut into small cubes
  • Take a pot, add oil to it. Add peanuts and roast them until crunchy. Keep it aside.
  • In the same pan, add pieces of garlic, pieces of green chili, and curry leaves. Saute them until rawness goes away. Take them out from the pot and keep aside.
  • In the same oil, add coriander seeds, cumin seeds, and then tamarind. Roast them well and take them out and keep them aside.
  • In the same oil (you can add more oil if needed), add kaddu pieces. Mix them well and cook on low flame with covered.
  • Add cilantro and mix well.
  • Cook it until kaddu pieces become soft. Turn off the stove.
  • Transfer them to a plate.

  • Let all the ingredients cool down.
  • In the mixer, first, grind peanuts, tamarind, coriander seeds, and cumin seeds. Then add garlic, chili, and curry leaves and grind them. Lastly, add kaddu pieces, jaggery, salt and grind them to a coarse paste.
  • (optional) add tempering before serving.

  • Store it in the refrigerator. It can stay good for 1-2 weeks.
  • Serve with Indian flatbread.

    1. आपण सगळेच रोज कुकिंग करत असतो. त्यातल्या त्यात विकेंडला जास्त पदार्थ किंवा वेळखाऊ पदार्थ करण्यात येतात. आता फरक एवढाच कि रेसिपीसाठी फोटो काढावे लागतात 🙂 Thank you.
