Bottle gourd=Kaddu=Dudhi=Lauki. This is a very simple and tasty curry made with bottle gourd pieces cooked with wet coconut, coconut milk, and spices.
Ingredients:
- Medium-sized bottle gourd
- 1 tbs oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- Curry leaves
- ¼ tsp Hing
- 1 tsp turmeric powder
- 4-5 green chili
- 1/4 cup coconut milk
- Salt to taste
- 1 cup coconut pieces
- 3-4 garlic cloves
- 1 cup chopped cilantro
Method:
- Make a green paste of coconut pieces, green chili, garlic, curry leaves, and cilantro
- Keep it aside
- Wash, peel and cut the bottle gourd into cubes
- Take a cooking pot, add oil, and heat it
- Add mustard seeds and cumin seeds and let them crackle
- Add hing powder and gourd pieces, mix well, and cook with the lid.
- After 1-2 minutes, add the green paste, turmeric powder, Salt, and coconut milk
- Mix well and cook until oil starts appearing on the surface
- Add water as needed to get the desired consistency
- Adjust the salt and turn off the flame.
- Serve with hot rice or roti.
