Bottle Gourd Curry with Coconut


Bottle gourd=Kaddu=Dudhi=Lauki. This is a very simple and tasty curry made with bottle gourd pieces cooked with wet coconut, coconut milk, and spices.

Ingredients:

  • Medium-sized bottle gourd
  • 1 tbs oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • Curry leaves
  • ¼ tsp Hing
  • 1 tsp turmeric powder
  • 4-5 green chili
  • 1/4 cup coconut milk
  • Salt to taste
  • 1 cup coconut pieces
  • 3-4 garlic cloves
  • 1 cup chopped cilantro

Method:

  • Make a green paste of coconut pieces, green chili, garlic, curry leaves, and cilantro
  • Keep it aside
  • Wash, peel and cut the bottle gourd into cubes
  • Take a cooking pot, add oil, and heat it
  • Add mustard seeds and cumin seeds and let them crackle

  • Add hing powder and gourd pieces, mix well, and cook with the lid.
  • After 1-2 minutes, add the green paste, turmeric powder, Salt, and coconut milk
  • Mix well and cook until oil starts appearing on the surface
  • Add water as needed to get the desired consistency
  • Adjust the salt and turn off the flame.
  • Serve with hot rice or roti.
