Bottle Gourd-Curd Curry


Bottle gourd=Kaddu=Dudhi=Lauki. This is a very simple and tasty curry made with bottle gourd pieces cooked with curd and spices.

Ingredients:

  • Medium-sized bottle gourd
  • 1 tbs oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • Curry leaves
  • ¼ tsp Hing
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 cup curd
  • 1-inch ginger piece
  • 1 tbs dried methi (fenugreek) leaves
  • 1 tbs coriander powder
  • Salt to taste
  • 1 cup chopped cilantro

Method:

  • Wash, peel and cut the bottle gourd into cubes
  • Take a cooking pot, add oil, and heat it
  • Add mustard seeds and cumin seeds and let them crackle
  • Add hing powder and curry leaves
  • Add ginger (either grated or crushed), dried fenugreek leaves, red chili powder, turmeric powder, salt, coriander powder, and fry. You can sprinkle some water to prevent the mixture from burning.
  • Add gourd pieces, mix well, and cook with the lid.
  • After 1-2 minutes, add enough water and cook.
  • Once gourd pieces start turning translucent, add churned curd to it and mix well.
  • Oil will start appearing on the surface.
  • Adjust the salt and turn off the flame.
  • Garnish with cilantro and serve with hot rice or roti.
