Bottle gourd=Kaddu=Dudhi=Lauki. This is a very simple and tasty curry made with bottle gourd pieces cooked with curd and spices.
Ingredients:
- Medium-sized bottle gourd
- 1 tbs oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- Curry leaves
- ¼ tsp Hing
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 cup curd
- 1-inch ginger piece
- 1 tbs dried methi (fenugreek) leaves
- 1 tbs coriander powder
- Salt to taste
- 1 cup chopped cilantro

Method:
- Wash, peel and cut the bottle gourd into cubes
- Take a cooking pot, add oil, and heat it
- Add mustard seeds and cumin seeds and let them crackle
- Add hing powder and curry leaves
- Add ginger (either grated or crushed), dried fenugreek leaves, red chili powder, turmeric powder, salt, coriander powder, and fry. You can sprinkle some water to prevent the mixture from burning.
- Add gourd pieces, mix well, and cook with the lid.
- After 1-2 minutes, add enough water and cook.
- Once gourd pieces start turning translucent, add churned curd to it and mix well.
- Oil will start appearing on the surface.
- Adjust the salt and turn off the flame.
- Garnish with cilantro and serve with hot rice or roti.
