Beetroot is a root vegetable also known as red beet, or just beet. It is a rich source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. Beetroots and beetroot juice have been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance. These benefits are due to their high content of inorganic nitrates. Beet can be eaten raw as well as cooked.
This is the easy recipe for raw beetroot. If yogurt (curd) is added, it is called beet raita. This koshimbir is without curd. You can make a similar koshimbir with grated carrots or white radish (mooli or mula).
Ingredients:
- 2 medium beetroots
- 3-4 green chilies
- 2 tbs Chana dal
- 1 tsp mustard seeds
- 1 tsp Cumin seeds
- ¼ tsp hing
- Salt to taste
- 1 tbs oil
- 8-10 curry leaves
- 1 cup chopped cilantro
Method:
- Wash, peel and grate beetroots
- Cut green chilies into small pieces
- Take a small pan for tempering and add oil to it
- Once oil is hot, add mustard seeds and cumin seeds and let them crackle
- Add hing powder
- Add chana dal and roast until changes color
- Add green chili pieces and curry leaves and saute
- For cilantro, either you can add in tempering or just garnish over the dish
- Add this tempering to grated beet, add salt and mix well together
- It can be served as a side dish
