Aloo means potato. Aloo paratha is a stuffed Indian bread with spiced mashed potatoes. It is one of the popular breakfast items. There are many different ways of making it. I am sharing my recipe.

Ingredients:

For dough:

  • 2 cup wheat flour
  • ½ tsp salt
  • water (for kneading)
  • 2 tbsp oil

For aloo stuffing:

  • 3 potato / aloo (boiled & mashed)
  • 1 tsp ginger paste
  • 2 chilies (coarse paste)
  • 2 tbsp cilantro (finely chopped)
  • ¾ tsp lemon juice
  • ½ tsp salt

Method:

To make dough for paratha:

  • Take wheat flour in a large bowl, add 1 tbs oil and ½ tsp salt. Mix well.
  • Add water slowly and start kneading. Knead to a smooth and soft dough.
  • Grease oil and rest for 20 minutes.

How to make aloo stuffing:

  • Score the potatoes around the middle which helps to peel the skin off easily after boiling.
  • Boil, peel, and mash the potatoes.
  • Take a pot, add 1 tsp oil, and heat it.
  • Then add ginger paste, chili paste, and mashed potatoes. Mix it well.
  • Add lemon juice, cilantro, and salt.
  • Aloo stuffing is ready.

How to make aloo paratha:

  • Make balls from the kneaded dough.
  • Make balls of aloo stuffing too.  
  • Take a dough ball, spread it with the hands, and place the aloo stuffing ball in the center of it.
  • Take the edges and start pleating bringing it to the center.
  • Join the pleats together and secure them with tight pinching. Make sure the stuffing should not be visible.
  • Sprinkle some wheat flour and roll slightly thick.
  • Transfer the rolled paratha to a heated flat pan and apply some oil on the top surface.
  • Flip it and apply oil on another side too.
  • Cook it well. Serve hot aloo paratha with butter, raita, or Indian pickle.
